Chorizo & Bean Stew – the hearty flavours of Spain

It seems a very long time since I’ve written a food post – probably because it has been a very long time! But as I cooked this fabulous dish and then sat down to write the recipe it felt like coming home. Food has the ability to do that – it soothes, it comforts, it brings people together and it makes the world feel like a safer place.

This is just the dish to achieve all of the above. It’s easy enough to double or triple the recipe if you want to feed a horde, it’s hearty and full of flavour and perfect to chase away the winter blues – although I’d be inclined to make this at any time of the year. Currently it’s mid-winter in New Zealand and bringing a touch of Spanish sunshine to my kitchen helps to brighten the cold and dark evenings.

You might think it strange that for the feature shot of this post I’ve used a photo of the raw ingredients. There is a reason. I like to make an effort when cooking this type of dish (or any type of dish) to source the very best of ingredients. I made a trip to my local gourmet market and picked up some beautiful tiger prawns and authentic Spanish chorizo (the real thing).

Italian Sausages with Tomato & Cannellini Stew

It seems appropriate that I’m currently snugly settled in a café with coffee and my laptop while the weather rages outside. Appropriate because my recipe today is another winter warmer.

Yesterday was the winter solstice in New Zealand and therefore the perfect time to share this recipe that I am extremely fond of. Not great timing for my fellow Northern Hemisphere bloggers (a heat wave has been sweeping Europe!) who won’t be putting winter warmers on their cooking agenda at the moment. But it’s great fun to store recipes away and then revisit them when the seasons change.

This dish has many things going for it – simple to make and packed with flavour being among them. And I’ve always loved a sausage. They are so comforting and versatile. But the key as with most things when it comes to food and cooking is quality. You really do need to start with a good quality sausage.

Cruising the Mediterranean – a day in Kusadasi, Turkey (and how to make spiced lamb flatbreads with homemade hummus)

During our cruising of the Greek Islands our ship made a stop on Turkey’s western Aegean coast. Kusadasi, where our ship docked, is a popular resort town and a major stop for the cruise ships.
