Chorizo & Bean Stew – the hearty flavours of Spain

It seems a very long time since I’ve written a food post – probably because it has been a very long time! But as I cooked this fabulous dish and then sat down to write the recipe it felt like coming home. Food has the ability to do that – it soothes, it comforts, it brings people together and it makes the world feel like a safer place.

This is just the dish to achieve all of the above. It’s easy enough to double or triple the recipe if you want to feed a horde, it’s hearty and full of flavour and perfect to chase away the winter blues – although I’d be inclined to make this at any time of the year. Currently it’s mid-winter in New Zealand and bringing a touch of Spanish sunshine to my kitchen helps to brighten the cold and dark evenings.

You might think it strange that for the feature shot of this post I’ve used a photo of the raw ingredients. There is a reason. I like to make an effort when cooking this type of dish (or any type of dish) to source the very best of ingredients. I made a trip to my local gourmet market and picked up some beautiful tiger prawns and authentic Spanish chorizo (the real thing).

Smoked Paprika Chicken – a delicious nod to Spain

Apologies again to all my lovely followers for my absence the last few weeks. I’ve been working tirelessly on completing the edits for my new novel. I’ve self-published my previous two novels on Amazon (you can check them out here). This time around I’d like to pitch the book to an agent and I’m hoping to have it ready by the end of the year. Wish me luck!

But regardless of how busy I am there is always time to cook good food. Some standards can never be allowed to let slip.

I can’t tell you how happy I am that spring has arrived in New Zealand. Winter this year seemed interminable, not helped by the horrible cough I had for weeks on end. But you need to be a little wary of spring. Just when you think it’s time to whip out the spring/summer wardrobe, Mother Nature decides to remind you that it’s not summer. Not yet. And on those chilly spring evenings I still find myself seeking comfort from the evening meal.

Food that soothes – Beef Stroganoff, a winter favourite

In contrast to an excellent night out at Chef’s Table (see my previous blog), last weekend was much quieter with a Saturday night spent in.

When I was younger, the prospect of spending a Saturday night at home was scandalous, embarrassing. Admitting you had no plans for a Saturday night left you feeling depressed and friendless. (Remember those fraught teenage years? Getting older isn’t all bad, you know).
